Wagyu filet mignon cooked to a perfect medium. So amazing.

Tom Colicchio’s CraftSteak – MGM Grand, Las Vegas, NV

This past week I went to Las Vegas for my first time.  It was for a work trip to attend and assist at the Genius Bar, as well as some focus groups for website improvements, at Avon’s Repfest 2016.

Jetlag hit me harder than I expected it would, but being in Vegas for the first time I just had to eat some good food in the little free time I had to myself between working.  My first night there I met up with my friend, Lex, who has been living in Vegas for the last 10 years, who I hadn’t seen since college. He came to meet me for dinner.  Since I was staying in MGM Grand he suggested Tom Colicchio’s CraftSteak. It did not disappoint.

We split the chef’s selection of domestic wagyu, which was a tasting of 2 cuts of wagyu a variety of appetizers, sides and a selection of desserts. My favorite things were the avocado with cucumber ribbons, the warm frisée salad, the corn, the filet mignon, the mushroom medley and the monkey bread dessert.  My least favorite things were the mozzarella, and the panna cotta. I normally like panna cotta, but I did not like the “jams” it was served with, and the other desserts were just way better.  The ribeye was great, but the filet mignon just far out-shined it. The mashed potatoes were good, we were told they would be the best ones we would ever have in our lives, but I am just not a huge fan of mashed potatoes in general.

I was extremely tired during this meal and especially by the end, but I tried to remember some details about each dish to share with you. Please see captions below each photo.

Freshly baked rolls topped with large sea salt crystals. These were the best I have had. No need for butter at all.

Warm frisée salad topped with a poached farm egg, smoked bacon lardons and dressed in a champagne vinaigrette. YUM.

Buffalo mozzarella topped with balsamic vinegar, olive oil, roasted red pepper and toasted hazelnuts. This was pretty good, I just really felt it needed some salt, which is not provided at the table.

Avocado topped with sea salt and a touch of tabasco aside cucumber ribbons garnished with chives and pickled red onions. Delicious!! I normally hate tabasco but this was just the perfect amount.

Roasted corn in butter. I don’t remember if there was anything else to it, but corn is one of my favorite things to eat, so all that matters was that this was very tasty.

From left to right – Panna cotta topped with some sort of crumble, a lemon compote, an apricot jam and fresh peaches, cinnamon monkey bread (cinnamon brioche, pecan toffee sauce and cinnamon ice cream), raspberry sorbet, cookies and cream ice cream and a plate of delicious fresh fruit. The raspberries in Vegas were amazing for some reason.

Tom Colicchio’s CraftSteak is located inside of the MGM Grand in Las Vegas and I do suggest you try it out for yourself. It really was very delicious!  Keep in mind they are only open for dinner. 1. Welcome back — there’s no place like home! Briefly – if you would like to browse through Colicchio’s book “Think Like a Chef” — it’s here. Also, I am not fond of panna cotta! E. ——————————————————————————————————————————————————————————– >
